                       The word astaxanthin has a

                             [ Greek ]  root 

                      ( Αστακóς, meaning crab ) 

          because it was first extracted
 from crayfish.

 

                                    astaxanthin       

is a fat-soluble red pigment that

can be found mainly in

microalgae 

                                 called Haematococcus pluvialis
and fungi called Xanthophyllomyces
dendrorhous. 

                 The formation of astaxanthin

is related to the stress suffered by these

organisms due to adverse
